WHAT IS CHILLI PANEER

Chilli Paneer is an Indo-Chinese fusion dish and is prepared with Paneer (Indian cottage cheese) and lots of spicy fresh green chillies.

Deep-fried or shallow fried paneer is coated in a spicy soy sauce mixture. There are many variants of chilli paneer such as dry or gravy chilli paneer.

Some recipes follow a more chilli sauce base (more Indian) and some are more soy sauce based for a Chinese style chilli paneer.

Since we first tried Paneer Chilli in a restaurant in London called Sakoni we have been striving to perfect our Chilli Paneer recipe. This recipe is a copycat of Sakoni Paneer Chilli.

Ingredients to make Restaurant copycat Chilli Paneer.



Paneer - you can use either homemade or shop bought here. The paneer should be soft

Green Chillies - you will need plenty of fresh green chillies for this dry chilli paneer as they provide the majority of the spicy flavour

Garlic and Ginger paste - this recipe requires a generous helping of garlic and ginger

Capsicum - we have used green capsicum only and a small amount as we don't want the peppers to sweeten the chilli paneer.

Soy sauce - use a mix of light and dark soy sauce.

Chilli sauce - you only need a small amount of chilli sauce, as we don't want the chilli paneer to gain a tangy or sweet taste.

Oil - we use olive oil to shallow fry the paneer and a mix of sesame seed oil and olive oil to cook the sauce. The sesame seed oil gives a more Chinese flavour

Step-by-step recipe method for Dry Chilli Paneer

Make sure all the ingredients are pre-prepared on the worktop as this recipe requires you to work quickly.  

1. First, cut paneer into bite-size cubes.

2. Mix it with little soy sauce and cornflour.

3. Shallow fry marinated paneer in a pan using some oil till brown.

4. Remove it from the pan and leave it aside.


5. In the same pan heat more oil.

6. Saute minced ginger-garlic, do not brown it.

7. Add cut capsicum and green chillies.

8. Saute.


9. Add remaining soy and chilli sauce and black pepper powder.

10. Mix fried paneer.

11. Add chopped spring onion, mix and turn the heat off.

12. Serve it with fresh lettuce salad leaves.

→ Chopping board optional 

→ Small bowl to mix cornflour slurry

ingredients:

  • 500 gms. paneer cubes -Indian cottage cheese
  • 1 medium capsicum
  • 15-20 fresh green chillies chopped any length you prefer
  • 2-3 spring onion chopped
  • 2 tsp ginger- garlic paste
  • Salt to your taste
  • 2tbsp cornflour flour
  • 1tbsp cornflour paste (mix with cold water and add one or two chopped green chillies)
  • 3-4 tbsp soy sauce -dark+light
  • 1 tbsp red chilli sauce
  • 1/2 tsp black pepper powder
  • 10-12 tbsp oil for shallow fry

instructions:

How to cook DRY CHILLI PANEER RESTAURANT- STYLE

  1. Marinate the paneer with 2tsp soy sauce and chilli sauce.
  2. Leave it for about 1/2 hour. 
  3. Sprinkle plain flour for coating so paneer doesn't stick to a pan.
  4. In a non-stick pan add oil, when it is hot fry the paneer till it gets brown.
  5. Take out the paneer, in the same pan add ginger-garlic and fry just 1-2 minutes, add chillies and capsicum let it cook just a few seconds and add salt, soy sauce(leftover) and black pepper powder now add fried paneer.
  6. Mix it well and add the cornflour paste and mix it once more.
  7. Garnish with shredded lettuce and spring onion.
  8. Enjoy hot!

NOTES:

Vegan can use tofu.
Use green chillies according to your liking or taste.
Pressed for time? don't leave paneer to marinate.
Making chilli paneer this way the colour comes out nice brown than red or orange in colour.
