In a month of April, I am praising and posting an ice cream recipe! Well here is the story..please do read :) In many parts of the world this time of the year temperatures are soaring high and surely chilled and frozen foods and beverages are on high demand but Usually in the UK this time of the year we have wet weather throughout the April with temperatures only going up by 12-15C, still we would behaving our soups or sipping teas and coffees, but surprisingly this year temperature peaked almost 25C almost for a whole week.
As sudden change in weather, and we basked in unseasonably temperatures, couldn't cope with the heat.According to this unexpected change, we adjusted our eating habit a little. Instead of spicy and hot dishes, light and cold dishes were enough for us, I didn't hit the frozen isle in the supermarkets, but reached out my ice cream maker and prepared this yummy ice cream at home although I wasn't in favour of making ice cream yet, but then thought enjoy this ...
I had almost 500 ml double cream left in the fridge after I used only 100 ml for Maltesers Cheesecake for a recent birthday in the family..Daughter was constantly reminding me to utilise..I knew why :) So in the evening we both headed to kitchen and in a jiffy we churned some ice cream. My personal choice would have been for kesar pista ( Saffron-Pistachio ) flavour, but since I knew that Caramel is a rage in the family.. so I opted for Caramel - Dulce de Leche Ice Cream !
This ice cream is so easy to make, just gather only 4 ingredients. No need to to make any custard base. While I took out cream and milk from the fridge, daughter licked teaspoon of caramel, again while I was mixing the ingredients she licked another spoon of caramel..once again I saw her hands were reaching out for caramel, I asked her can you go and fetch ice cream maker's freezer bowl from the freezer..AND I quickly licked the spoon of caramel :)))))
How we like it..homemade deliciousness , eggless and definitely without any artificial garbage. All fresh, sublime smooth textured and different flavoured ice cream is enough to make whole family weak kneed !!!
I had no intention whatsoever to post this recipe on JCO, reason number one that maybe you can find this recipe almost all over the internet, it's not that I've made any innovation in this recipe and one of the biggest reason is that I do find extremely hard and tricky shooting ice cream photos. So much preparation needs to shoot frozen food, take a little more time and ice cream starts melting and then you just have to take a lick then it melts more and before you realize almost it is all gone :)
On the next afternoon, we all had a first lick of this ice cream and all agreed just how good this ice cream tastes, husband insisted that I should shoot few clicks for my blog, because according to him this homemade caramel ice cream is far better than store bought and he wants to keep this recipe on my blog, so maybe one day if I don't agree to make this ice cream, still he can reach out for this recipe :) back up plan !!!

Eggless and Easy Caramel - Dulce de Leche Ice Cream
Awesome and delicious ice cream..so easy to prepare !
- 450 ml Double cream
- 150 ml Full fat milk
- 1 can (397g) Caramel or Dulce de Leche
- Few drops Vanilla extract
Freeze the freezer bowl as per manufacturer's instruction.Combine milk and caramel and vanilla extract in one bowl and whisk till there are no lumps of caramel in there.Now add double cream and gently mix everything.Place freezer bowl into ice cream machine, turn it on and transfer liquid into the ice cream maker and follow according to manufacturer's instructions. My ice cream maker produces soft finish, so for firmer texture I freeze the ice cream mixture into airtight container for at least an hour. Ice cream is ready to serve.
