No Bake Buckwheat and Cacao Bars #nobake #healthy #proteinpackedsnacks #yummy #vegan #cacao


Protein packed and nutritious bars or snacks are essential and favourite in our family, especially perfect for active and busy brains and bodies as they stay busy for long day. even I would throw one in the hand bag for myself when I pop out of the house. They are so much better and delicious that we enjoy sometimes as quick breakfast on the go, as a snack or even for dessert !

 My pantry never runs out of nuts, dry fruits or healthy grains and seeds, because I know that for these kind of Ingredients demands are high in the family. I use one recipe base, and go crazy adding different things and make new variations because I don't want my kids to get tired of the same old granola bars ! Sometimes I prepare two or three kinds of bars same time, as both kids loves to devour different ones every other day.

 I prepare Protein bars baked or without bake, like Masala Chai (tea) granola bars,  No bake No Sugar Peanut butter Raisins and hemp seeds cookies Mixed seeds and Pear truffles  , No bake-No Sugar-No fat Protein Bites , Apple Cinnamon Flapjacks  or sometimes Hazelnuts, Buckwheat and Honey Cookies ( I keep switching to different kind of butter ) every time.

Couple of months ago both kids started their academic year in college and University, my job was to fill a container with healthy and Plenty of bars because I would like them to have something sweet yet filled with energy. In my pantry spotted a jar full of Buckwheat groats, kept staring at it few minutes and thought about making Bars with it instead of Oats. So in about an hour I whipped up this batch of chunky Buckwheat Bars, Not too sweet, Not too light but just right ! These Buckwheat Bars came out so good, bit crunchier, nuttier and definitely leaves you satiated !





You will need :-


  • 1 cup lightly roasted buckwheat groats ( dry roast in a pan for 7-8 minutes ) 
  • 1/2 cup lightly roasted mix nuts finely chopped
  • 1 1/2 cup dry fruits ( figs, dates, apricots and raisins )
  • 2-3 tbsp raw cacao powder or nibs ( not cocoa powder )
  • 2 tbsp. extra virgin coconut oil 
Method :-
Grind half of the buckwheat groats in a grinder.
Add heated coconut oil and add dry fruits in a blender and make smooth puree.
Now add cacao powder, ground buckwheat groats and grind again for few seconds.
Mix remaining roasted buckwheat groats in to mixture, mix well.
Line a baking tray or plate with grease proof paper and place mixture on the tray.
Level it with spoon and let it set for half an hour.
Cut into desire shape.
Wrap it up in grease proof paper and store in a air tight container.
Enjoy !

  7. I've never cooked with buckwheat groats.Would definitely like to try this recipe when I get some groat. The granola bars look so delicious.
