Eggless, Butterless Cream cheese Chocolate Brownies #egglessbaking #chocolate #brownies #soyummy


Don't get surprised if I tell you that I have not tasted a single piece of Original ( baked with Eggs ) brownies in my life !




Neither I've bought or baked at home. Somehow it never appealed me nor that urge came to me that I should go to bakery and buy cakes or pastries or any baked goodies or if I go to any cafe for a coffee or espresso I am absolutely fine with my cuppa !



So tell you the truth, I have no idea what is the original taste of Brownies. There are several reasons for it maybe I am too obsessed with Indian sweets, so western desserts hardly gets any attention from me and I have try and avoid baked sweets and desserts with the eggs, however maybe knowingly or unknowingly I've tasted cakes with eggs as I don't want to be a party pooper by saying to the host that OH I won't have a piece of cake, because it's not eggless but same time by myself I will not bake or buy stuff with eggs, simple as that !



On the contrary I've baked a few cakes with eggs with my friends in India, and every time I got complimented by many, however in my adulthood I have never really baked with eggs. I am more of a spice girl, but there does come a time I put my apron and oven on, and don't mind a little whisk affair in the kitchen :) only on one condition that those goodies will be Eggless !



Yes, I know there could be many things won't turn out as good as without eggs, but hey if you've never tasted it what difference does it make :P So my homemade baking is pure vegetarian, without eggs. Definitely little difficult to get texture and taste right, but I guess it's not too bad afterall we are trying and succeeding.





Eggless, Butterless Cream Cheese Chocolate Brownies  turned out spot on, they were delightful, fudgy and moist which recently I baked on  our son's birthday as this year it was low key birthday celebrations we just settled for one dessert. No one in the family could resist these rich and dense brownies with cream cheese filling, boy wolfed down about 4-5 pieces in one go and so did sister and dad too :) Every one said  "Okay not very artistic swirly designs, but the Proof was in the Pudding " !!!!
and it was a happy dancing time for me  :)

Eggless, Butterless Cream cheese Chocolate Brownies
Eggless, Butterless, dense and rich brownies swirled with Cream Cheese batter !

Ingredients
  • 200 mls Low fat greek yogurt
  • 180 g Cream cheese - Philadelphia
  • 100 g Self - raising flour
  • 3 tbsp. Cocoa powder
  • 225 g Sugar
  • 100 g dark chocolate chips
  • 75 g Walnuts chopped
  • 1 tsp. Vanilla extract
  • pinch or 1/8 tsp. Baking powder
Instructions
Beat together the cheese, 50 g sugar and 1/2 tsp. vanilla until smooth, then set aside.
Preheat the oven to gas mark 4.Lightly grease a 20cm-8inch square baking tin and line the base.
Sift the flour, cocoa powder and baking powder and keep aside in a mixing bowl.
Now combine yogurt, remaining sugar and vanilla and leave it aside.
Place dark chocolate in a heatproof bowl, either use M/W to melt or use double boiler method.
Add melted chocolate and yogurt mixture and combine well. 
Add chocolate and yogurt mixture into sifted flour mix. 
Add nuts mix.
Pour the half brownie batter into a greased and lined baking tin and smooth the top.
Carefully spread the cheese mixture over it, then cover it with the remaining brownie mixture.
Use a palette knife to swirl the two mixtures together gently.
Bake it for 55-60 minutes, yes it takes that much time.
Remove it from the oven, let it cool and cut into pieces.
Serve it with a cuppa or dust little icing sugar and strawberries.Enjoy !!
