How to colour your diet?
Eat a rainbow!
I always try to increase the colour ante on our food plates ! I love to eat a colourful , crunchy and refreshing salad bowl anytime ! Salads can be very healthy and satisfactory meals on their own or it can enhance your main meal. Most of us always grab few basic stuff like cucumber, tomato and onions when it comes to making salad, well not anymore ! Nowadays salad can be prepared almost from any ingredients !
I prepared this avocado and strawberry salad for our lunch and I must tell you it was pleasing to the eyes and the taste buds , awesome ! Buttery avocado with sweet and juicy strawberry , with a light sweetness and tangy dressing was to die for. This salad can be eaten as a light first course on a very hot summer days ! Takes only few minutes to prepare and gives you lots of time to relax in lovely sunshine :) Go on , don't wait put some rainbows on your diet !!
Recipe adapted from TheDailyGreen with little changes. I kept an eye on this salad recipe since last winter and was eagerly waiting one sunny day to prepare :)
You will need :-
- 2 ripe Avocado
- 18-20 fresh strawberries
- 200 g various salad leaves ( I used baby leaf salad bag from Asda ) ( optional )
You will need for salad dressing :-
- 3-4 tbsp good quality Honey
- 3-4 tbsp. lemon or lime juice
- Sea salt per taste
- 3 tbsp olive oil
- Ground black pepper per taste
In one bowl whisk honey, oil , lemon juice, salt and pepper.
Peel avocado and cut them in to big chunks or wedges.
Wash and halved the strawberries.
Drizzle the honey vinaigrette over the fruit salad and serve immediately.
Tip :- The honey will slip right off the spoon if you first measure the oil.
