Navratri Special - Stuffed Capsicum with Peanuts !

Hello readers,

I love vrat ka khana, but since I have gained more knowledge about nutrition and healthy eating I avoid fasting. Reason is most of the vrat food is full of carbohydrates and is sugary and fatty :( and it doesn't help my body at all...

But in this fasting recipe I have used peanuts to get protein and capsicum for some vitamins, minerals and other benefits. The colours of the capsicum look great and the different flavours and textures are wonderful!

This sabji was delicious and tasty, enjoyed by everyone in the house!



You will need :-
  • 2-3 capsicums
  • 1 medium potato peeled and diced
  • 1/4 cup coarse ground peanuts
  • 1 tbsp grated coconut
  • 2 tbsp ginger-chilli crushed
  • Salt per taste
  • 1 tsp sugar
  • 1 tsp lemon juice
  • 1 tsp black pepper powder
  • 1 tbsp Oil
  • 1 tbsp fresh chopped coriander


Method :-
Wash capsicums and cut into half.
In one bowl mix peanuts, coconut,salt, sugar,lemon juice, ginger-chilli paste and black pepper powder.
Mix everything and stuff mixture into half cut capsicum .
Heat oil in a heavy based pan and place stuffed capsicum into the pan.
Add diced potato in the leftover stuffing, mix and add into the pan.
Add little water, cover pan with lid and let the sabji cook  on a very low heat.
It will take 20-25 minutes to cook the potatoes, if potatoes are not cooked add few tbsp of water and let it cook again.
When sabji is done , turn off the heat .
Garnish with chopped coriander and serve with mild yogurt.

  2. The look of the dish is awesome.. and the taste must be equally good.. I love the addition of peanuts in sabzis..they give a very nice taste..my today's recipe also has crushed crunchy peanuts..:)
