The reason behind this concept was to meet so many of you wonderful food bloggers and display YOUR cooking expertise.

So how it will work ?

Today we have our ninth Guest , very very close friend of mine, we have lots of similar interest and. I can scold her, ignore her, but love and treat her like my younger sister, here we have Nivedita Thadani with love I call her Nive ( chutney queen ) of Nivedita's Kitchen. Simple, authentic and many many traditional dishes recipes make her blog a unique place. Especially her North Karnataka style cuisine and my most favourite chutney recipes, makes me Crazy ;-) I have made so many chutnies from her blog, each and every one a HIT in my family...Let me check this time has she got something I like :-) ?

Hi all, its me Nivedita, better known as "Nivi" to all the friends.
I love eating and it took me to the cooking(not actually, having working mother, I had to enter the kitchen at very young age), I am always a failure at the first attempt in the kitchen, but have a strong "don't quit" attitude. Visit my blog for my more recipes with all the experiences,
I am thankful to Jagruti(should I? kidding), we both met here in blog world, and came very close like sisters. Both have same interests but we too had fight like other sisters. That did not break our relationship, I think it brought us more close! Isn't it Jagruti?
I always get attracted towards her blog as she is a fantastic cook and a foodie photographer! yes, her photos it self pushes you into the kitchen to try her recipes.
And, and, she is very talented, her mind is full of new thoughts,(check her blog with so many events with rare themes and her FB where she has created very useful groups).
I thank her for inviting me into her home to share my recipe. I do not like to be a guest in her house, because I am not an outsider!!(more greedy!!!)

BEYISIDA AKKI ROTI - KAI CHUTNEY(Cooked Rice flour roti and coconut chutney)

Akki roti, kai chutney.... yummmmm, a perfect breakfast of North Karnataka. But for me it can be for breakfast, lunch, tea time snack or dinner...

It was a long time I made this. Nothing specific for that, its just I was lazy. My mom is not here to help me with this. The rice flour has to be cooked in a hot water which is a real tough task for me. I never get success in it and this time also the same thing happened. My whole vessel and the flour got burnt off :-(. But thanks to the microwave which helped me to make what I wanted and have it too.
Here is the recipe for the most delicious breakfast from my kitchen.

For the roti:
To cook:
Rice flour - 1 Cup
Jowar flour - 2 tbsp
Water - 1/2 cup
Salt to taste
Jeera or cumin seeds - 1 tsp
Oil to roast each roti.

For masala
Onion - 1 big
Curry leaves - few
Green chilly - 2 or more
Coriander leaves - 2 tbsp(optional)



Method:-
Take a big M/W safe bowl.
Add all the ingredients under to cook
Mix well and keep in the M/W for 2 minutes.
Remove it and check the consistency. It should not be watery. If you feel add some more flour or if it is dry add some more water. Cook for one more minute.
Remove it out and add the ingredients under For masala.
Mix well and cook for one more minute. Remove and transfer it into a big plate or wide bowl.
Keep it to cool.

Take an aluminium foil and cut into a big square(little bigger than the roti size)
Keep the oil in a bowl and little water in separate bowl.
Take a small ball from the ready mix.
Apply 1 tsp oil to the foil.
Keep the ball on the foil and wet your fingers in the water.
Start pressing from the middle and keep on spreading till small roti shape.  Make three holes in the roti.
BE CAREFUL while pressing as it gets torn if you press hard.
Heat tawa and apply oil.
Take the foil carefully in your hand and turn it on the hot tawa. Slowly release the roti by lifting the foil.
Allow it to roast on one side. And turn it the other side and roast it.
Remove and repeat with other flour.




Kai Chutney (Coconut Chutney) :
Fresh coconut - 1 cup, grated
Green chilly -2 or 3
Cumin seeds - 1/2 tsp
Salt to taste
Tamarind - 1 tsp
Sugar - 1 tsp
Water to make chutney


For tempering:
Oil - 1tsp
Mustard seeds - 1 tsp
Cumin seeds - 1 tsp
Curry leaves - few

Take all the ingredients except water and keep in a M/W safe bowl or plate. Add little water and run for 1 minute.
Remove and transfer it into a mixi bowl and turn into fine paste.
Heat oil in a small kadai. once hot, add mustard seeds, cumin seeds and curry leaves. Remove from heat.
Add it to the chutney once cool.

Kadai Karela

"Aav re varsad, ghevriyo parsad, uni uni rotli ane karela nu shaak"  which means
" Welcome rain, we'll have sweet treats and hot chapatti's with bitter gourd sabji ".
In India since monsoon starts, festivals starts flooding too, and when festivals are there who will resists the sweet and delightful dishes, ? but because you have all these heavy and rich food, it is wise to eat bitter gourd sabji too..!



Every child's nightmare starts when they hear that they are going to have karela sabji for dinner or lunch, however my son proves me wrong here...He can eat karela sabji any day, any time !! So I make karela sabji quite often and always look out for innovative karela recipes. I saw this recipe on one of the Asian channel, hubby liked it and he quickly put it on record for me. When I saw it I got tempted and made next day. We all loved it except my daughter, well she never likes Karela !



You will need:-
  • 4-5 medium size bitter gourd
  • 1 big onion thinly chopped
  • 2 tsp ginger-garlic paste
  • 1/4 cup full fat yogurt
  • 2 tsp crushed cumin and coriander seeds
  • 2-3 green slit chillies
  • 1 big tomato chopped
  • 1 tsp red chilli powder
  • 1/2 tsp turmeric powder
  • salt to taste
  • 3-4 tbsp oil

Garnishing
  • Handful fresh finely chopped coriander
  • Fresh ginger thin slices
Method:-
Peel the bitter gourd, cut in to thin slices, sprinkle salt and leave it aside for half an hour.
Wash bitter gourd in cold water and place them on the baking sheet, drizzle 1-2 tbsp oil and bake in the oven for 20-25 minutes, or until light brown on gas mark 4-5 . ( if you like you can fry as well ).
In a heavy bottom kadai heat remaining oil and fry onion till very light brown.
Add ginger garlic paste, red chilli powder, turmeric , and very less salt, fry 1-2 minutes.
Add beaten yogurt with crushed cumin and coriander.
Cook mixture for 5-7 minutes on low heat.
Now add slit green chillies, fry few seconds , add chopped tomatoes.
Add baked karela, mix well and cover the kadai with lid.
Let it cook the karela on a very low heat till done. ( it will take 12-15 minutes )
Garnish with fresh coriander and ginger.
Serve hot with hot phulka, roti, salad, daal and raita.

Cappuccino Swirls ! Kuch Meetha Ho Jaye :P

I would say " All you need is love. But a little chocolate and cricket match to watch, now and then doesn't hurt." I am not a chocoholic, I am a cricketholic !!! not only me but my whole family, we love to watch and enjoy a good cricket match now and then ..and all these reminds me that today is for Indian cricket and Indian cricket fans an exciting and pleasurable day  !



India wins ICC-under 19 world cup , magnificent wins against Australia. Well done boys !! but same time our senior players are not far behind too, they gave India a comfortable victory over New Zealand !! Congratulations men in blue...:)





Sadly for us we couldn't watch these matches live here in UK, why ? It's a long story ! any way at least we are happy that Indian cricket made us proud :)
Coming to my recipe, which I made last week, requested by my daughter. She loves to read, and she brought this book along with her reading books from library. The Big Book of Cookies, she found the recipe from there and asked me to make for her as she was craving for sweet treats !



" A melt-in-mouth, mocha flavoured cookie drizzled with white and dark chocolate it's just the thing to have with that mid morning caffe latte, as well as with afternoon tea with friends "



You will need:-
  • 2 tsp instant coffee powder
  • 2 tsp boiling water
  •  150 g plain flour
  • 115 g cornflour ( cornstarch )
  • 1 tbsp cocoa powder
  • 225 g unsalted butter ( room temperature )
  • 50 g golen caster sugar


For the decoration
  • 50 g white chocolate
  • 25 g dark chocolate
Method:-
Preheat the oven to gas mark 5 or 190C/375F.
Line 2-3 baking sheets with baking parchment.
Put the coffee powder in a cup, add the boiling water an stir until dissolved. Set aside to cool.
Stir the flour, cornflour an cocoa powder.
Place butter an sugar in a bowl, beat until creamy. Add the coffee and the sifted flour and mix well.
Spoon into piping bag with a any shaped nozzle.



Pipe 20-22 spirals, slightly apart, on the prepared baking sheets.
Bake for 10-12 minutes or untill firmed not browned.
Remove from oven and leave on the baking sheet for 1 minute, then transfer to a wire rack to cool.



When they are completley cool down, melt white and dark chocolate seperatley in heatproof  bowles set over a pan of hot water.
Place the cooled cookies close together on paper. Using a teaspoon take some white chocolate and flick over the cookies. Moving your hand speedily from left to right to create small lines of chocolate drizzle over them.



When all the white chocolate has been used, repeat process with the dark chocolate.
Leave until the chocolate has set then remove the cookies from the paper.
Store in a air tight container , great as a edible gift too or just simply devoure them with your friends and family and have some quality time together.

In my case I would love to gobble them while I watch a good cricket match :D

Product Review : PopChips !

Not Fried, Not Baked ????? what could it possibly be ?
                                                                                          It's Popped !!!!! Just like popcorn...

Recently, I received a box of a pop chips (crisps) in assorted flavours. The first thought came in my mind when I saw the packaging is that they are serious about their product. The individual packets come in a variety of colours without screaming at you. It's the chips on the inside that do all of the talking! The fresh and modern packaging mirrored the new technology of "popped" chips.

Popchips arrived from the States, where they are hugely popular amongst Americans and now they are also avaliable in UK places like Waitrose, WHSmith and Selfridges - lucky us!!



Popchips are a healthy alternative snack when you feel like having something savoury, these chips are not fried, not baked but popped. Sound peculiar doesn't it ? Popchips have been made using this method in just the same way popcorn is made. You apply a little heat and pressure to a potato slice and it pops ! Popchips comes in various flavours added with many of natural spices and flavours. There are more than 10 flavours, which satisfy each and everyone of us - even the fussiest eaters. They are suitable for vegetarians and gluten free and come in various sizes. Popchips are low in fat, less than 100 calories in the 23 g packet, without compromising on taste and satisfaction!



Each and every chip was thick and appeared slightly bubbled in appearance, especially relative to some of the other snacks we try here on a daily basis. The seasoning was coated generously and evenly on each and every chip. Quite crunchy but not overly hard. The majority of the chips inside were still well formed and we didn’t really have many crumbs to deal with - they had a good shape to them.

I've tried all five flavours, they all had their own taste and unique flavour to them .



First I tried Original Potato Chips - They were just perfect with the right balance of salt and seasoning, everyone would love them the way they are! Nothing to add, Nothing to take out..

Barbecue - Quite strong smoky, tomato flavour and had lovely kick to it. I felt a proper charcoal flavour to it, and on this one you can see little more seasoning. It was okay, but for me it was quite a strong flavour but my dear husband loved it :). I think this particular flavour is more for men.



Sour Cream and Onion - Very mild, subtly flavoured, perfect to have with your sandwiches! I can have these even if I have to go for an interview...

Sea Salt & Vinegar - When I opened the bag, you can say there is a vinegar presence, quite sharp but without being overwhelming. Although there was a strong taste, couldn't see loads of seasoning on it which was refreshing.



Salt and Pepper - As soon as I opened the packet, I smelt freshly ground pepper which I love. It has that gentle warmth to it, not spicy at all and flavour lingers even when it's finished eating.

So overall I would say Popchips are not fake, well made and super tasty ! One 23 g pack was nicely filling for me. My favourites were Sour Cream and Onion and Salt and Pepper, that's my kind of product! I finished munching them without having tell tale greasy fingers :)

Thank you Popchips for providing this healthy and delicious treat, will definitely POP over to my nearest store to get this Popped Popchips !!

Sweets and festivals go together - from East to West and North to South..whole year round !! You cannot have a celebration without any sweet treats :-) Of course, you don't need to wait for Diwali to enjoy Gulab Jamun, Eid to share lovely Shir Khurma , Hanukkah to feast on Rugelach or Easter to bake a batch of Simnel Cookies !!!!

We can make and share these delectable and divine treats on an ordinary day and turn that day into a special occasion and an International Celebration.. It would be a great idea to make and share those dishes , which we don't make in our everyday life. As a food blogger you want to widen your horizon and put yourself in a challenge to learn something new..am I right ? So how will that concept fit in my event ?

Let's see...
In this event we will choose one country, and will choose 2 different dishes from that country which are very popular amongst their citizens.
You can choose one dish to make or if you can't resist make both.
Can adapt recipes from net, cookbook or ask friends and relatives.
The host will decide on 2 dishes.

Girls rock in London- Vegetarian Pad Thai Noodles

At last Britain has seen almost a week without rain. Sun is shining beautifully. We had soaring temperatures over the last weekend. Crowds of sun seekers flocked to beaches to bask in warm weather and we food blogger girls headed to central London for a  blogger meet after many if's and but's ! What a day we had, !! I don't need to describe here only my experience, let's hear from other girls themselves :-)

We all had fantastic time seeing each other and made promises that we shall meet more often ! While I had gala time with girls in London, kids and family thought about me.. will I be hungry when I'll come home ? How sweet :) So they thought about something easy to make and kept all the ingredients ready to make Pad Thai Noodles ! Perfect light and balanced dinner after having indulged yourself in calorie  loaded food.

You will need :- Noodles
  • 500 g rice noodles ( cooked )
  • 150 g bean sprouts
  • 50 g cabbage shredded
  • 200 g firm tofu
  • 1 small bunch spring onions ( white part , leave green part aside )
  • 3-4 tbsp minced garlic, ginger and red or green chillies
  • Handful of fresh chopped coriander
  • 50 g roasted peanuts chopped
  • 3-4 tbsp sesame oil
  • Lime wedges to serve
You will need:- Sauce
  • 1-2 tbsp tamarind pulp
  • 1/4 cup vegetable stock ( I used stock cube )
  • 4-5 tbsp soy sauce
  • 2-3 tbsp  chili sauce
  • 2-3 tbsp brown sugar
  • 1/4 tsp white pepper powder
  • 1 tbsp peanut butter
Method:-
Combine " sauce " ingredients in one bowl, stir well till sugar dissolves and leave it aside.
Heat oil in wok or frying pan, add white parts of onion and minced garlic, chillies and ginger.
Stir fry for 1 minute and add cabbage and stir fry another 2 minutes.
Now add the 1/3 of sauce and noodles, stir fry everything 1-2 minutes on medium to high heat.
Add tofu and keep mixing, It will break up into small bits and be distributed throughout the dish.
Keep adding sauce and continue stir fry about 4-5 minutes.
Add bean sprouts, folding them into hot noodles. Turn off the heat.
Check the seasoning.
Serve hot in a plate, sprinkle the green parts of the spring onion, coriander and roasted peanuts.
Add wedges of fresh cut lime on the side.
Enjoy HOT  Pad Thai noodles !!

Savoury Marrow Pancakes !

Do you guys remember ? A HUGE marrow was given by my neighbour ?, I did mention in my Oatilicious Marrow Paniyaram post. No ? it's just a click away that recipe, please do check it out. It took me more than week to finish that Huge thing :)  Glad, I finished it, didn't want to throw so I asked my FB friends where else can I use this marrow and quite a few friends gave me lots of suggestions.



One of them was to make  spicy pancakes, without any second thought I rushed to the kitchen and started prepare for it, same time I spotted a recipe book, which my MUM bought in 1978 ! It's a treasure , I flicked through and I landed on very similar recipe " Dudhi na Pudla" means Bottle gourd Pancakes . Without delay I prepared these spicy, soft, spongy and tasty pancakes very quickly for our lunch and they were vanished in no time :-) Thank you Nayna for the suggestion !



You will need:-
  • 1 cup besan ( chick pea flour )
  • 3/4 cup Rice flour
  • 2 cup grated marrow or bottle gourd ( dudhi )
  • 1 medium onion finely chopped
  • 3-4 tbsp green chillies, ginger and garlic paste
  • 1/2 tsp freshly ground black pepper
  • 1 tbsp crushed whole cumin and dried whole coriander
  • Salt to taste
  • 2-3 tbsp fresh chopped coriander
  • Oil for shallow frying
  • 1/4 tsp bicarbonate of soda


Method:-
Place all the ingredients in a big bowl except oil and combine everything . Do not add water, water from marrow will loose it's own water.
Leave it aside for 10-12 minutes and mix well. Check the seasoning.
Smear a large, wide, non-stick frying-pan with 1 tsp of the oil and set over a lowish heat. When very hot, stir the batter and pour about one small ladalful on to the centre of the pan.
Quickly tilt the pan in all directions as you would for a crêpe, spreading the batter to make an round small pancake.
Cook for 2-3 minutes or until the pancake is reddish-brown at the bottom.
Dribble another tsp of oil around the edges of the pancake. Turn the pancake over and cook, uncovered, for a further minute or until golden.
Remove from the heat and they are ready to eat. Repeat with the remaining batter. Always remember to stir the batter before you use it. (leftover batter may be covered, refrigerated and re-used).



Enjoy HOT with ketchup or any chutneys !

Oatilicious Marrow Paniyaram ~ Oats and Marrow spicy snack

Paniyaram are becoming a very close buddy in my family. Now and then request comes from family members :-) can we have paniyaram for lunch today ? and I can't seem to say NO either because the fact that I like them and so very keen to try few varieties. I have tried masala paniyaram then I tried vegetable paniyaram and they are always a HIT ..Oatilicious Marrow paniyaram born out of my other recipe which is Oats and Mix daal Chilla. I made few changes in that recipe and made Paniyaram instead of Chilla ( pancake ). Healthy and very tasty, one or two just not enough, you have to have a full bowl :-)




My next door neighbour gave me this huge marrow ( white pumpkin ) the other day, she told me she has 4-5 of them in her fridge too ! ( she grows so many vegetables ) I kept thinking how many dishes will I  make from this huge marrow. I used in so many dishes, still nearly 1kg was left. Then I thought of making oats and mixed daal paniyaram and added grated marrow in the batter. Once again very successful recipe and round of applause for me too :-)



You will need:-
  • 1/3 cup or 60 g channa daal
    1/4 cup or 40 g cup toor daal
    1/4 cup or 40 g washed moong daal ( yellow )
  • 1/4 cup or 40 g urad daal ( white )
    150 g porridge oats
    1 tsp ginger and green chilli crushed
  • 1 cup grated marrow
  • 1 medium onion finely chopped
    salt to taste
    1/4 tsp black pepper powder
    4-5 whole red chillies
    1/2 tsp turmeric powder
    1/4 tsp garam masala
    1 tsp cumin seeds and Fennel seeds ( lightly crushed )
    Few torn curry leaves
    Oil for greasing the pan


Method:-
Wash and soak daals together for 3-4 hours. Grind coarsley with oats, red chillies and little water.
Add ginger and green chillies , all the powder masala. salt , onion , grated marrow, curry leaves and cumin and fennel seeds.
Mix well and check the seasoning.
Heat the paniyaram pan and add few drops of any oil and pour a small amount of batter into each hole.
When they starts to cook one side, turn them very carefully and cook other side till they are crispy and light brown on both sides.
Remove from the pan and serve hot with tomato chutney.
