One more joyful moment with sweetcorn & Pumpkin Seeds Salad and a product review - Terra Rosa

Sorry guys.. it's another post starting with the weather! I guess us Britons don't ever talk about anything else...
Few days ago I thought that the summer is saying adieu to us, so was thinking putting away all our garden furniture, BBQ and Gas Bottle for next summer but then my prediction was wrong ! Britain is shining beautifully in September :) Met office have predicated tomorrow even hotter than today !!! woohoo!!



In weather like this no Briton would leave any opportunity to enjoy themselves with two things ...rush to the beaches or if not then bring out their barbie ! So, naturally, we grabbed this opportunity too, last night we had a fantastic BBQ dinner. Probably our last BBQ of the year.



We had really good fun and enjoyed every dish that we made. Everyone raved about it :) But I forgot that the boys in my house don't eat corn on the cob, they would only have the kernels. We girls love hot hot sweetcorn spread with zesty lime and chili flakes, it gives corn an extra kick..! We were left with an extra corn on the cob, so thought of making a salad next day..Since I already had roasted corn, this salad was ready in no time. Chopped few vegetables and tossed with Extra virgin olive oil and lemon juice..A sweet, juicy and hearty salad was ready for our lunch... and remade for dinner!!



Last week I agreed to do a review of Terra-Rosa products, Arabian specialities to try it out. Next day a huge box arrived at my door step with selection of products. Box contained so many products from Jordan. I will let you know about the other stuff later in my near future posts, but today I am reviewing a product which is : The Essence of Gourmet Ingredients, Passionately pressed through generations, a traditional taste from the holy land of Jordan - "Terra Rossa olive oils" .



Beautiful gift box contained with two 50ml bottles, an original Extra Virgin olive oil and Exquisite Sinolea olive oil from the finest and oldest groves came with another four 50ml bottles which were Infused olive oil. The flavours were Infused Extra Virgin Olive Oil with lemon, Garlic, Basil and Chili. As soon as I opened the bottle , I could tell that here we are not talking about just an ordinary olive oil, but they are well blend, you can smell the distinctive aroma and flavour. Also I noticed that oils are well infused, because the oil has achieved a significant colour to it. e.g. I saw chilli oil with radish colour, Basil oil with deep green colour. Each and every oil can be used in variety of dishes and they all have their unique, delicate and incredible flavour.



Extra virgin olive oil can be used for cooking as well as a drizzling and finishing oil.

Exquisite Sinolea Olive Oil is purely for drizzling and finishing. I used this oil today in making my sweetcorn salad. I must stress here that I have never ever tasted olive oil like this before, it is truly rich in taste.

Infused Lemon fantastic over salads, vegetables . Can be used for brushing during baking, grilling for amazing flavours.

Infused Garlic Can be used in salads, grilling on mashed potatoes or simply over crusty bread.

Infused Basil Can be used over steamed vegetables, salads and grilled fish.

Infused Chili  great for dipping , can be added in spicy dishes.

Coming back to  today's recipe Sweetcorn Salad



You will need:-
  • 1 cup sweetcorn kernels BBQ ed ( can be used boiled or tins )
  • 1/4 cup finely chopped tomatoes
  • 1/4 cup finely chopped red onion
  • 2 tbsp extra virgin olive oil
  • 2-3 tbsp fresh coriander and mint chopped
  • 1/4 cup finely chopped yellow pepper
  • 1 long green chilli finely chopped
  • sea salt to taste
  • 1/4 tsp black pepper powder
  • 1 tbsp lemon juice
  • 1/2 tsp red chilli flakes
  • 2 tbsp toasted pumpkin seeds


Method:-
Put everything in a bowl and toss to combine. Chill for 1/2 an hour .
serve on it's own or with any meal.
Great for picnic.

    The salad is just perfect.
    Surprisingly the weather here also has become warm suddenly....a day for a BBQ.
