Girls rock in London- Vegetarian Pad Thai Noodles

Hello readers,

At last Britain has seen almost a week without rain. Sun is shining beautifully. We had soaring temperatures over the last weekend. Crowds of sun seekers flocked to beaches to bask in warm weather and we food blogger girls headed to central London for a  blogger meet after many if's and but's ! What a day we had, !! I don't need to describe here only my experience, let's hear from other girls themselves :-)

Cool Charu " hey gals...it was an awesome day out...i cud nevr imagine i wud hv so much fun with people i dnt knw and tuk hardly minutes to become buddies...seriously felt like a college gal again...lukinh fwd to next meet.....kudos to our leader nupur for taking the initiative and to every one else for making it happen !!yeah gals...we rock !!!!!

Namkeen Nupur " It was Paav Bhaji for the main course and my mind immediately  flew to the game we played and I could not resist myself checking all the ingredients there :)
Lovely meet it was Ladies, thank you all for coming and making it possible..It was an absolute fun day out for me..
We will surely work upon the ideas we discussed today.. And will meet very soon again :)

We all had fantastic time seeing each other and made promises that we shall meet more often ! While I had gala time with girls in London, kids and family thought about me.. will I be hungry when I'll come home ? How sweet :) So they thought about something easy to make and kept all the ingredients ready to make Pad Thai Noodles ! Perfect light and balanced dinner after having indulged yourself in calorie  loaded food.

You will need :- Noodles
  • 500 g rice noodles ( cooked )
  • 150 g bean sprouts
  • 50 g cabbage shredded
  • 200 g firm tofu
  • 1 small bunch spring onions ( white part , leave green part aside )
  • 3-4 tbsp minced garlic, ginger and red or green chillies
  • Handful of fresh chopped coriander
  • 50 g roasted peanuts chopped
  • 3-4 tbsp sesame oil
  • Lime wedges to serve
You will need:- Sauce
  • 1-2 tbsp tamarind pulp
  • 1/4 cup vegetable stock ( I used stock cube )
  • 4-5 tbsp soy sauce
  • 2-3 tbsp  chili sauce
  • 2-3 tbsp brown sugar
  • 1/4 tsp white pepper powder
  • 1 tbsp peanut butter
Method:-
Combine " sauce " ingredients in one bowl, stir well till sugar dissolves and leave it aside.
Heat oil in wok or frying pan, add white parts of onion and minced garlic, chillies and ginger.
Stir fry for 1 minute and add cabbage and stir fry another 2 minutes.
Now add the 1/3 of sauce and noodles, stir fry everything 1-2 minutes on medium to high heat.
Add tofu and keep mixing, It will break up into small bits and be distributed throughout the dish.
Keep adding sauce and continue stir fry about 4-5 minutes.
Add bean sprouts, folding them into hot noodles. Turn off the heat.
Check the seasoning.
Serve hot in a plate, sprinkle the green parts of the spring onion, coriander and roasted peanuts.
Add wedges of fresh cut lime on the side.
Enjoy HOT  Pad Thai noodles !!

    1. Nisha, I have used Rice noodles, and rice noodles are always thin, well in UK we get thin one, not sure about anywhere else.

  5. Oh what fun it was Jags...must meet again:) Arre your pad thai looks amazing and like the veg version! I think we get the flat noodles too in Tesco. Let me check:)

  6. Preeti, 100 % saachi vaat..:-) must meet again yaar ! This noodles from ASDA already cooked, I have seen flat noodles , but they are egg one, so I don't use those .
