Salted Caramel

Just as in modern technology, products like mobile phones come with so many new apps and gadgets to lure the buyers as far as the culinary world is concerned, many many new recipes seem to be conjured up by food enthusiasts !! One particular recipe that comes to mind at the moment is a favourite of so many and this is Salted Caramel !!!

Ticking off the holy trinity of sugar, salt and fat – salted caramel is the class A drug of the confectionery world, says Nigella Lawson.

Few weeks ago my daughter had salted caramel cupcakes in her school canteen, and she kept singing about them to me. So I thought I'll look up the recipe on google and came to a surprise that this recipe has taken a league in the culinary world, however I haven't seen much of a craze in UK !!
 I found very good recipe here, it was very very easy to make and you can do anything and everything with it... and surprise is that there is nothing about Salty this recipe..

"Now you’ve got your sauce, you’re ready to take your next steps: eating it. My suggestions are as follows: In the first instance, and for ease, just dribble it over vanilla ice cream. But next up, please consider adding a warm brownie (regular, not the bacon ones) to this pairing. Or drizzle over chocolate melting-bellied fondant puddings or chocolate cake. Or pour over clotted cream and Christmas pud. But it is not just this realm that welcomes the sauce: it makes a divine and rakishly chic accompaniment to apple crumble, apple cake or simple baked apple."  Says Nigella Lawson.

Enough said. Now here is the recipe...



You will need:-

1 cup granulated sugar
3 tbsp butter  at room temperature cut into pieces
1/2 cup double cream at room temperature
1 tsp sea salt

Method:-
Place sugar in a heavy bottom pan on a medium heat.
Keep whisking as it melts.
Sugar will begin to forms clumps, but that's OK.
Continue whisking till sugar has melt.
Continue cooking till sugar has reached deep amber colour or almost reddish brown.
As soon as caramel started to smoke add all the butter at once and whisk until the butter completely melted.
Remove pan from the oven and pour the cream into caramel.
Whisk until all of the cream has been incorporated and you have a smooth sauce. Add the sea salt and whisk to incorporate.
Leave the sauce to cool at room temperature and fill in the clean jar.


Half of the caramel vanished as soon as I made it, half of it I used making these :-) yes, it's Chocolate and Espresso Cupcakes with Salted caramel.  Recipe to follow !!
