How was your weekend ? I hope you had a great weekend !! I had mine very busy as I was out whole day on Saturday and Sunday busy cooking whole day..Cooked few dishes and took photos of them because we were blessed with sunny spells..here is one dish which I made for our breakfast, we all like it, my daughter adores it and she wasn't feeling too well so I made it specially for her !!
You will need:-
- 1/2 packet ( 100 g ) of rice vermicelli
- 2 tsp green chilies and ginger chopped
- 1/4 cup sweetcorn ( I used frozen )
- 1 medium potato cut into thin slices
- 7-8 curry leaves
- salt to taste
- 1/4 tsp turmeric powder
- 1/2 tsp mustard seeds and cumin seeds each
- Pinch of asfoetida ( hing )
- 2-3 tbsp oil
- 1-2 tbsp lemon juice
- 1 tsp sugar
- Handful fresh coriander leaves
Soak vermicelli in hot water for 5 minutes.
Drain the water by putting vermicelli into a seive leave it for a while untill the water has completley drained.
Heat the oil in a heavy bottom pan, add mustard and cumin seeds, when they pops add hing.
Add curry leaves, potatoes and cook for 4-5 minutes, now add sweetcorn, salt and turmeric powder.
Cook for 2-3 miuntes, add green chillies and ginger. Mix well.
Now add vermicelli, sugar and lemon juice. Stir fry . Garnish with coriander
Ready to serve. Serve hot and enjoy !!
