Paneer with colourful vegetables !!


Hi Friends, wish you all a Happy Holi......Have a superb and enjoyble Holi !!!! Specially those people who are in India, you got fantastic weather to enjoy the day...for my other bloggywood friends,who doesn't know about this festival this is the link, to know more about Holi also known as Festival of Colours !!


To celebrate Holi I made Paneer dish with colourful vegetables....I chose Broccoli, Sweet corn kernels, and red bell pepper...also I used sweet chilli sauce to bring little bit of sweetness to the curry... as we love to have all these beauties, these vegetables kept their promise in making us soooooooooo happy..;-))

You will need:-
  • 1 cup Paneer pieces(Indian cottage cheese)
  • 1 cup Broccoli florets(used frozen)
  • 1/2 cup red bell pepper cut into small cubes
  • 1/2 cup sweet corn(used frozen)
  • 3-4 tbsp olive oil
  • 1 big onion finely chopped(I pureed )
  • 1 tbsp Garlic-ginger paste
  • 1 tbsp green chillies finely chopped 
  • 1/2 cup tomato puree
  • 1/4 cup almond paste
  • Salt to taste
  • 1/2 tsp tumeric powder
  • 11/2 red chilli powder
  • 2 tsp cumin and coriander powder
  • 1/2 tsp Garam Masala
  • 2 tsp Thai sweet chilli sauce
Method:-
Cook broccoli and sweetcorn in little water untill tender, leave it a side.  In a heavy bottom pan heat oil and add onion and cook for few minutes. Add garlic ginger paste and fry few more minutes, now add finely chopped green chillies and tomato puree and add all the masala powder and salt.  Let it cook untill you see oil leaving the masala.  Add all the veg and little water to thin the gravy. Let the veg cook  about another 4-5 minutes.  Now add the sweet chilli sauce and paneer and mix well. Add almond paste and mix it, if the gravy is too thick add little water and let it cook for 2-3 minutes more on a low heat.

Serve it hot with chappatis or naan.

Panini with spinach and roasted red pepper hummus!!


I got this recipe all the way from U.S.A, washington D.C, when we visited the 'National Air and Space Museum'...my daughter and husband take lots of interest in Astronomy,they never miss any opportunity in gaining more knowledge about the space and the universe..specially my daughter has done an Astronomy course in GCSE at very young age and passed the exam with A*....so it was after visiting NASM and NASA space centre in florida, she was so facinated about Astronomy that we decided to put her on an Astronomy course...


In between these visits we approched a cafe inside the space centre where we found that only vegetarian dish available was "Panini with spinach and Hummus"...as we were starving we went for this dish and to our surprise, this dish turned out to be so delicious that I asked the assistant for the recipe...;0)) kindly she gave me the recipe and this dish has become a big hit with my family !! I've made it so many times with diffrent flavoured hummus...

You will need;-

Italian Panini Bread( I bought from supermarket)
Healthy margarine
Baby spinach
Roasted pepper hummus

Method:-

Slit open the panini bread.  Apply margarine in the inside, now fill it up with thick layers of hummus and spinach.  Now wrap the top layer of the panini bread on it.  Toast useing the panini maker or grill it.(I know pics are not good as I wanted..:0(, trust me taste is much much better)

Roasted pepper Hummus !!

To make hummus you don't need too much time, and the taste is gorgeous...even you don't have to use dried chickpeas and soaking and all that..just use shop bought tin of chick peas and that would be fine...great as a dip but you can use many ways..this time I made it with Roasted red peppers, and also added Harrisa paste for bit of spiciness..I hadn't much time so I used peppers straight from the jar..it turned out really well !!

You will need :-
2/3 cups garbanzos (Chickpeas)(drained; reserve 1/4 cup liquid) Tin
1/4 cup tahini (sesame seed paste, made of ground sesame seeds, used jar one)
juice of 1 lemon
1-2 cloves garlic, chopped
1 teaspoon ground cumin
1/2- cup Red Roasted peppers(used jar one)
1-2 tbsp Extra Virgin Olive oil
1 tsp Harrisa Paste
1/2 teaspoon salt

Method:-

Place the ingredients in a food processor and process until smooth, adding reserved liquid if necessary. Eat with whole wheat pita breads and/or raw vegetables or use in any other recipe which I used for my panini..

Butternut Squash Raita(Dip) and My Experiance watching MNIK !!!

This very popular Butternut Squash (Kaddu) raita is a delicious and easy recipe prepared with boiled butternut squash, creamy yogurt, and other basic but flavourful ingredients.

Went to see yesterday MNIK (MY NAME IS KHAN) !!! really I don't prefer to watch movies in the first week, coz gets really over crowded, I prefer some breathing space as people sitting nearby suffocates you with sneezing and coughing, also inconsiderate parents allowing their kids sitting behind kicking your seats, endless disturbance!

If a person has a disability of some sort and does unusual things everybody reacts to it but when normal people behave unjustly in public places like cinemas, It is just not right !!during my movie yesterday I had to break my silence and asked the two ladies sitting next to me to stop making noise with their crisp packets, which went on for ages and it was just driving my patience. So I bravely spoke out to them !!

Now coming to my recipe, Butternut Squash Raita which my Mum used to prepare, it was her favourite. Very healthy, light, slightly sweet and creamy. This raita is very easy to digest. So quick and easy recipe which can be consumed during the fasting period too.

Butternut Squash Raita(yogurt dip)
This very popular Butternut Squash (Kaddu) raita is a delicious and easy recipe prepared with boiled butternut squash, creamy yogurt, and other basic but flavourful ingredients.
Ingredients
  • 250g Butternut squash peeled and diced
  • 300g Yogurt (any)
  • salt to taste
  • 1 Tsp. Dry roasted cumin seeds
  • 1 Tsp. Red chili powder
  • 2 Tbsp. Fresh coriander leaves
Instructions
Cook Butternut squash in a microwave with little water till tender about 6-7 minutes or cook on a stove until well done. Mash well and leave a side.when it gets cool add yogurt and all the other stuff. mix well and it's ready. this raita complements really well as a side dish with the rest of the meal.Enjoy!

Avocado Pesto Pasta

My Daughter just loves Pasta, !!!..she can have them for B'fast, lunch and dinner..never gets enough of it...I don't know why? well, when she reads this she will say "ma, how can you say this"?do you ever get enough of eggplant or Aubergine!! hehehe...:-)) somehow I am sure this will be her response.. she always looks out for different sauces and methods for her pasta....I had few ripe avocados left , after using them in smoothies, guacamole and freezing some Avocado puree for later use..so my daughter  looked more recipes for avocados and she came up an idea for Avocados in Pasta..and she was very happy to make it all by herself...;-)) so here is the Avocado pasta dish which Hayley made and we all loved it...

You will need:-
  • 1 cup cooked pasta
  • 1 ripe avacado - chopped
  • small bunsh basil
  • 1-2 garlic clove
  • salt to taste
  • 1/2 cup walnuts
  • 2 tbsp extra virgin olive oil
  • 1/4 cup parmesan cheese( I didn't use it, there was a enough  good fat for me in Avacado and walnuts)
Method:-

Process together all the ingredients except the pasta, in a food processor untill almost smooth.  Toss together with hot pasta and serve.  Sending it to Siri's event Healing FOODS- Avacado. Also Jo's event Pasta Party.

My 50th Post, Sinful Sukhdi (Jaggary Fudge).... and Awards or Tohfa(Token of Apprecitaion and love)!!

Hello to all my Bloggywood Friends !!! time flys too quickly....I remember how much encourgement I needed to start this blog, and today writing my 50th post...It's a milestone, the feeling of happiness which may be Sachin felt after making his first half Century!!!!!!!!!! I never thought that I would write my 50th post within such a short time, but with my family support and also all of you fellow bloggers, who have been a great source of inspiration with all the kind remarks and feedbacks, it means a great deal to me and it has really been worth it because without you lovely guys I wouldn't have also made some great friends around the world.....;-))

To celebrate my 50th post I made this dish "SUKHDI",(sukh-happiness) made this dish many times but never planned in advance, it's always been on instant demand by my daughter and hubby who sometimes have cravings for this even around middle of the night;-))  very popular in Gujarati  household...

You will need:-
  • 1 cup wholemeal flour(roti atta)
  • 1/2 cup grated jaggary
  • 3/4 cup ghee or unsalted butter
  • some cashewnuts
Method:-

In a heavy bottom pan heat ghee and add flour.  Roast on a low heat till golden brown, not the burnt brown.  when the mixture comes together add the grated jaggary and mix very well.  Take off the heat and spread the mixture evenly in a greased tray.  Sprinkle cashews and cut in to a diamond shape while it's warm.  Let it cool bit more and serve.  At my house as soon as this is ready it will be demolished in no time...:-DD

Tiger Paws !!!

Whenever I go shopping with my husband, there will always be a time when he will drag me towards the bread section - especially when he goes shopping on an empty stomach ! We would stand near there for a while, staring at the bread and then he would ask me : "Jagruti, do you want buy some tiger bread?", when I know full well that is it him that really wants to eat the bread ! :)  . . . I always end up saying yes, but I try and make it look as if it is only him that likes the bread - but i secretly love it too ;)
There has never been a time where we have gone shopping together and we have not brought home tiger bread or tiger rolls for the family.....
I have tried many times to find a good recipe for tiger rolls or bread but never had any success. I came across a really good recipe on this blog.
I have said alot about how much we love tiger bread, but what exactly is it?  This link will give information on the unique bread. These tiger rolls have a nutty flavour which comes from sesame oil and the mottled crust is due to a rice paste glaze...when I made this bread and showed it to my husband he was the happiest man on earth, he was so happy that he took me out and bought me a lovely black dress!!!!

You will need:-Bread
  • 400 g strong white bread flour
  • 100 g rice flour
  • 2 tsp salt
  • 1 tsp sugar
  • 2 tsp yeast
  • 3 tbsp sesame oil
  • 300 ml warm water
You will need:-Topping

  • 1 1/2 tsp yeast
  • 100 ml warm water
  • 1 tsp sugar
  • 1 1/2 tsp sesame oil
  • 60g rice flour
Method:-

I used my bread maker to make a dough. Mix together the tiger paste ingredients and leave it for 15-20 minutes. Preheat oven to gas mark 5. When the dough is ready or doubled in size flatten the rise dough on a lightly floured surface and knead for few seconds.  Divide in to a equal size and shaped them into a ball. Place on a well greased baking Sheet.  Coat the surface of the rolls with rice paste and leave it for half an hour.  Cook rolls for 10-12 minutes and turn the oven down to gas mark 4 and cook the rolls for further 10-15 minutes. At this stage I coated more seasame oil on a rolls. Leave to cool on a wire rack.

Broccoli with Bengal gram Daal and Fenugreek seeds!!

Continuing on my Superfood diet I made another dish which is very healthy and nutrious to maintain my 0 size figure in good health in this 21st Century!!! Broccoli, when I saw first time in U.K, thought why do they have green Cauliflower? well over 20 years ago... in India never heard about it...well now I know brocolli inside out....;0)) We include broccoli in our diet specially for getting Iron, as we are vegetarian very hard to get all the vitamins and minerals....Very thankful to Italians who brought this prized vegetable with them to the new world around Colonial times...now I am in love with this little green gem!!!  Also Bengal gram Daal which is full of protien and has very low GI values( which ranks foods on how they effect our blood sugar levels) Chana Daal is very beneficial for Diabetic people...for more info see here ...Now on Fenugreek seeds you all know about it, so I am not going write about it and coming to my recipe....

You will Need:-
  • 2 cup Broccoli florets(steamed)
  • 1/2 cup Bengal gram daal (soaked and cooked not mushed)-Chana daal
  • 1/4 cup Fenugreek Seeds (soaked about 2-3 hours)
  • 1 big Onion finely chopped
  • 3-4 cloves garlic finely chopped
  • Salt t taste
  • 2-3 tbsp olive oil(pomace from Italy I use)
  • 1/2 tsp tumeric powder
  • 1 tsp red chilli powder
  • 2 tsp corinder and cumin powder
  • 1/4 tsp garam masala
Method:-

Heat oil in a heavy bottom pan and add onion and fry for few minutes.  Add garlic and let it brown.  Now add steamed broccoli and cook for about 3-4 minutes. Add channa daal and fenugreek seeds without water and mix well.  Now add salt and all the masala and mix well and cook further for 5-6 minutes on a medium heat.  Serve hot with roti or naan..we had ours with roti and BUTTERNUT SQUASH Raita..RECIPE COMING SOON..

Enjoy as much as we did and specially my kids without any fuss!!!! I know my rotis don't look like roti, coz I use Wholemeal Flour which is very healthy and full of fibre without any oil or ghee...

Mango Pancakes !!

Today it's Shrove Tuesday in U. K, also call 'Pancake Day'....!!! and I made these pancake for my kids..I've made mango pancake 3-4 times in the past...kids love it..:-))....I used to serve mango pancake with whipped cream but it also compliments with Mixed berry Coulis !!!

 You will Need:-

  • 1 cup plain flour
  • 3/4 cup caster Sugar
  • 2 tsp fresh coconut-shredded
  • 1 cup mango pulp
  • 1/4 cup ricotta cheese
  • 1/2 cup cooked and cooled rice
  • Little milk for thin the batter
To make pancakes, In a bowl combine all the ingrediants and make a smooth batter.  Heat a oil in a non stick frying pan, take small ladel of the batter and spread evenly to make a circle.  Cook evenly on bothside untill golden brown.  Repeat this process for the rest of the batter.

Serve it with your choice of filling. Enjoy as much as my kids did...

Super foods Smoothie!!


Avacado, Watercress and Mango posses such strong health benefits, that they are referred to as "Super Food"....me and my family always love to add superfood in our regular diet....so here I come with the Superfoods smoothie which contains health benefits from Avacado, WATERCRESS AND MANGO contribute nearly MORE THEN 20 vitamins and minerlas...

You will need:-

  • 1 Avacado, Peeled
  • 80 g Watercress
  • 1/2 mango flesh, peeled
  • 250 ml any fruit juice(I used tropical juice)
  • Few icecubes if you are living in a hot climate..I am not :-((
Method:-

Place all the ingredients in a blender and blend untill smooth.  Serve in a glass and enjoy as much as we did..

Creamy Daal Makhni without cream for your loved one's heart !!!

Yap....you've read title right...daal makhni also call it Maa ki Daal,without any butter or ghee..I've made it for my family...we are quite addicted to this daal, therefor I make regular, but i am careful using lots of fat in this dish..even without ghee daal tasts delicious and creamy....then why cream in this pics? the heart shape just an added decoration...tha's not the cream, i've used a low fat yogurt....


You will need:-
  • 2 cups whole Black Gram(whole urad) soaked overnight.
  • 3-4 Cloves
  • 1-2 cinamon bark small
  • 1-2 bayleaves
  • 1 cup finely chopped tomatoes or tin tomatoes-pureed
  • 1 big onion finely chopped (i pureed in a mixer)
  • 4-5 cloves of Garlic-paste
  • 4-5 green chillies- paste
  • 2" ginger piece- paste
  • 1 tsp red chilli powder
  • 1/2 tsp tumeric powder
  • 1/2 tsp Garam masala
  • 2 tsp coriander and cumin powder
  • 3 tbsp olive oil (use unsalted butter or ghee for richer taste)
  • Salt to taste
Method:-

Cook the daal in pressure cooker with 3 whole spices and enough water, about 20-25 minutes.  Mash daal slightly to make creamier.  Now in a heavy bottom pan heat oil and add pureed onion, fry on a slow heat untill turns slightly brown, add ginger, chillies and garlic paste, fry for a 2-3 minutes. Add tomatoes and all the masala powder and cook till you can see oil leaves the masala(this tells you that masala has cooked properly). Now add daal in the masala and mix really well.  add salt and let it simmer gently for 20-25 minutes. Daal is ready to serve.  Goes well with Roti, Naan or rice...i love mine with slightly burnt roti, yes I delebrat burn my rotis....

Maha Shivratri and Sinful Ricotta Cheese Peda !! (Saffron and Cardamom milk fudge)

Glitter Words to every one.....for more on this see here and here ..Devotees of Shiva observe a fast during Mahashivratri , so i observe fast today, but my fast is not what you call a fast..I can't stay hungry so i do make Vrat food, and eat it more than I would in normal days...so is it really worth it to fast? well yes so you can indulge  yourself in to heavy food..basically the vrat food has much more fat and sugar content....:(([Glitterfy.com - *Glitter Words*]It's an excuse to eat rich food, so fasting for me only happens about twice a year.....So here I come with my one of the dish which i made for shivratri, yes and i want to call it sinful because after seeing the ingredients you will agree with me..from now on I am starting my Sinful series...I'VE TRIED MANY TIMES MAKING PEDA WITH MAVA OR KHOYA, but never suceeded then someone told me years ago that why don't you try it out with Recotta cheese and i gave it a go and it turned out really well....since then I always make peda using recotta cheese...

You will need:-

100 g Ricotta cheese (Full fat)
75 g full fat milk powder
30 ml double cream
100 g sugar
2 tbsp ghee
Saffron threds soaked in little warm milk
1 tsp cardamom powder
few pistacho for decoration

Method:-

Heat ghee in a heavy bottom pan, keep heat low and add cheese, milk powder and cream.  Mix well and keep stirring so doesn't stick to bottom of the pan. Now add sugar and saffron milk and  keep stirring till everything comes together and becomes a one mass.  Mixture should be like cookie dough so you can roll or make it into a shape.  let it cool, now add cardamom powder and mix well. Take small amount of mix and make a small ball or give any shape like i made them into a heart shape.  I didn't add any food colour, this is the natural colour from saffron..

Enjoy them as much as we did...
