You will need:-
- 1/2 tin pineapple cubes
- 1 green skind apple(used granny Smith)
- 1 tsp lemon juice
- 1 tsp oil
- 1 small onion finly chopped
- 1 clove garlic chopped
- 1 ripe tomato chopped
- 1/4 tsp red chilli powder
- 1 tsp Tabasco sauce
- 1 tin borlotti beans drained
- Salt to taste
- fresh coriander
Heat the oil in a pan and cook onions with garlic until they are lightly browned and softened. Meanwhile dice the apple and sprinkle with lemon juice. Now add diced apple and continue to cook, stirring frequently, untill dice are slightly brown, add pineapple and cook for few minutes. Now add tomatoes and chilli powder and Tabasco sauce and continue to cook for more 3-4 minutes. Add the beans to the fruit mixture and stir well and cook urther 5 minutes over a low heat to mix and mingle the flavours. Season to taste with salt. Garnish with the fresh coriander. For a mexican style presentation, accompanany with flour tortillas...Enjoy as much as my daughter did.....

Loved the 'Kem Cho' series. I love gujarati food...my neighbours in India were Gujaratis, so I grew up eating many authentic gujarati dishes. I make Guju food quite often at home. I was a little dissappointed to not find the adadiya recipe in this series. Mane bahu bhave :-).

Pineapple and apple sound so sweet and delightful against the chili powder, Tabasco, and garlic. I've yet to use borlotti beans. Must search them out.
