Alphonso Mango Panna Cotta ! ~ Mango Mania

I am huge fan of the TV programme Come Dine With Me, which airs on Channel 4 in U.K....as being a  foodie and interested in cooking, I am always glued to the TV to watch this..where 4 or 5 different people get together and each day they invite them to their home to dine...and those people vote for them out of 10....In the end winner gets £1000....I noticed many many times people make Panna Cotta for dessert...always I get tempted to make it, but then I leave it as one of the main ingredients is Gelatin...

Few weeks back I saw this Mango Panna Cotta Recipe on Collaborative Curry and I had instant desire to make it and eat it...with mango I could eat anything...like Namitha says in her post 'Love at first taste' for me 'Love at first sight'...she used Gelatin, but I made mine vegetarian and instead of Pistachio nuts I used Walnuts, Chocolate chips , Cranberries,Apricot pieces and Almond flakes..also I made one more change, she used her Martini Glass to serve, I used wine glass...To get agar agar I travelled about 5 miles each way as I couldn't find it in my area..but it was worth it..me and my family loved it..it was a super hit and I got 4 yes's to make it again...Thank you Namitha for sharing this wonderful recipe with us, you made it sound so easy, and I got inspired to make it....

You will need:-

  • 1/2 cup Mango pulp(fresh alphonso)
  • 1 cup Double Cream
  • 1/4 cup Sugar
  • 1 cup skimed milk(Namitha used a half and half)
  • 1 tsp pure vanilla extract
  • Walnuts,Chocolate chips, Dried Cranberies , Almond flakes and chopped dried Apricot
  • 2 tbsp agar agar flakes
Method:-
Devide the mango pulp equally into 4-5 serving glasses and freeze it,took aout 2-3 hours.Bring double cream and milk to boil. Add sugar and agar-agar flakes. Stir until flakes dissolves. Add vanilla essence, mix well.Switch off the heat. Let the mixture come down to room temperature and pour it over the frozen mango pulp.  Sprinkle walnuts, chips, cranberries and apricot pieces.  Let it set in a freeze about 2-3 hours, without peep into freeze...;-) and than you can enjoy this elegant classic Italian dessert in Glorious sunshine !!!!!!!!!!!!!!
