Apple and Date Salad


Before I came from India, my world of cooking was confined to typical gujarati cooking, and maybe pushing it to north and south indian food... Upon coming to London, I discovered a whole new range of world foods. I had alot of time on my hands in those days, so I spent my time doing window shopping, paying frequent visits to libraries, and mostly watching food programs on british tv. This lead to me learning about salads, dressings and ways to make fun more presentable and colourful...
 I came across this book, Fresh Fruits and Desserts by the Reader's Digest. It has a recipe in it: Apple and Date salad..it is a crunchy salad that contains fruit, vegetables and nuts in a creamy - yogurt based dressing.  I added bit Indian touch to this salad by garnishing with the Savoury Boondi....

Plus points for this salad are:
Apples with their skin  ,celery and dates provids dietry fibre, also dates being one of the major source of natural sugar...and yogurt are known to be helpful in maintaining the balance the 'freiendly and unfriendly' bacteria that live in the digestive tract...

You will need:
  • 55g hazelnuts or walnuts - chopped
  • 2 green skinned dessert apples - roughly chopped
  • 170g fresh dates - roughly chopped
  • 1 small red pepper - seeded and chopped
  • 2 celery sticks - sliced
  • 115g seedless grapes - halved if large
  • 2tbsp chopped parsley - optional
  • mix green salad
And for the yogurt dressing
  • 150 g plain low fat yoogurt
  • 4tbsp creme fraiche
  • 1tbsp lemon juice
  • 1 tsp caster sugar
  • salt and pepper
Method
Put hazelnuts or walnuts into a small dry frying pan and toast, stirring until you can smell a nutty fragrance and then set nuts aside.
For the dressing, put the yogurt, creme fraiche, lemon juice and sugar into a large bowl with salt and pepper to taste and mix well.
Add apples to the bowl and stir until pieces are well coated with the dressing. Add the dates, red pepper, celery and grapes and stir to mix.
Place the green leaves on a plate and pile the salad on top and then sprinkle over the toasted nuts and parsely.

Enjoy it for lunch or a serve it as a side dish to a main meal...
