At first, I thought that kheer can only be made by stirring and stirring for hours on end. Then, I found another method from my mum that makes the same delicious kheer in less than half the time. Since then, this has been the way that I make kheer and it's been a hit everytime.
You will need:
rice - 1/2 cup
milk - 4-5 cups
sugar - 3/4 cup
ghee - 1 tbsp
double cream or evaporated milk - 1/2 cup
dry fruits and nuts - small handful
cardamom and nutmeg powder - 1 tsp
saffron threads soaked in warm milk
Method:
wash the rice and put into a pressure cooker with about 2 cups of milk and ghee (use a big pressure cooker) and cook the rice up to 2-3 whistles. Meanwhile, boil the rest of the milk. Then add the cooked rice into the milk and keep stirring for about 10 mins then add the sugar. Cook for another 5 mins then turn off the heat. Now add the cream or evaporated milk and all of the powders, dried fruit, nuts and saffron. Leave to rest for about 5-10 mins, then serve
